Bruschetta is something I adore!  Very fresh and healthy!

The thing I like most about Bruschetta is that anyone can really invent their own recipe.  Tuscans also spread it with fegatini: a kind of pate made with fresh herbs and chicken livers.

The original Bruschetta is made with Tuscan bread, oil, garlic, salt and pepper.

Here I used a ciabatta bread and also prepared the classic Tomatoes and Bruschetta.

Moreover I toasted the bread in the oven, where originally, this was done on a charcoal grill.  You could either use the oven or the BBQ!  Bruschetta is a wonderful appetizer during a BBQ!

 

Ingredients:

Ciabatta or French bread, cut into 3/4" thick slices

Garlic

Extra Virgin Olive Oil

Salt and Pepper

Tomatoes, diced

Herbs

 

Method:

Preheat the over to 250°C.

Cut the bread into 3/4" thick slices.

Lightly coat one side of each slice of bread with olive oil and place in the oven.

Toast for about 7 minutes (time depends on the thickness of slices).

Grate a clove of garlic on the toasted bread.

Add salt and pepper... READY!

 

With tomatoes...

 

In a little bowl combine the diced tomatoes, olive oil, salt, pepper and some fresh herbs: it could be basil, dried oregano or thyme.

Leave for a few minutes to marinate.

Spread the mixture on the toasted bread.
