Bacon Leek and Potato Soup PDF Print E-mail

Ingredients:

1kg potatoes, skinned

1/2 packet bacon, chopped

1 large leek, sliced

100g butter

500ml cream

Salt and pepper to taste

 

Method:

Boil the potatoes until tender. Drain and reserve liquid.

Meanwhile cook the bacon and leek in the butter until leek is soft.

Add 500 ml cream, salt and pepper to drained potatoes and whizz with hand blender until smooth, using reserved cooking liquid to thin until at desired consistency.

Add leeks and bacon and adjust seasoning to taste.
