Minestra is the Italian word for soup: Minestrone means big soup.  This is the best known Italian soup: a thick vegetable soup where I normally add pasta or rice.

For this recipe I just went into my supermarket and saw what vegetables are in season and just add them to my recipe!  This makes the Minestrone always a kind of surprise for everybody!  When I decide to cook it, I never know what my vegetables will be!  And this is what I like most about this recipe!  Flexibility and creativity every time!!

It takes about 40 minutes to cook and a bit of time to wash and cut the vegetables.  But the result is worth it!

 

Ingredients for 4 or more servings:

1 large onion

2 large carrots

1/2 broccoli

3 large potatoes (about 350g)

1/4 cabbage

1 bunch of spinach

150g sweet beans

2 Tablespoons extra virgin olive oil

2.5 litres water

150g short pasta

2 pinches salt

 

Method:

It is very important that the vegetables are thinly sliced!

Put all the vegetables in a saucepan with the water and salt.  Bring to the boil and simmer until all the vegetables are tender.

Blend to desired consistency using a stick blender.

Add the pasta and continue cooking until the pasta is tender.

Adjust the salt to taste when the pasta is ready (taste and tenderness).

Serve.

 

Tips:

At the end we add some grated cheese (just a little bit...) and sometimes a little tablespoon of olive oil.


Another tip... you could freeze it.  If you cook a double amount you could eat your portion and then freeze the rest once cooled.  It could be a nice soup for busy moments!
